
Sieur de le Gardeur
Fromagerie Champêtre is very proud of this cheese, made with 100%, unmodified cow milk.
Made with pasteurized milk, this semi-firm, surface-ripened cheese has an orangey rind covered with fine white mould. It is carefully aged 40 days for a slightly sharp taste reminiscent of wild mushrooms with herb and lactic aromas. Its soft rind is creamy smooth, and enjoys the company of a supple, aromatic wine.
Located in Repentigny, in the Lanaudière region, Fromagerie Champêtre was inspired by local history in naming this cheese Le Sieur de Le Gardeur, in homage to Pierre Le Gardeur, Sieur de Repentigny, and his son, Jean-Baptiste Le Gardeur, who founded Repentigny in 1670. For some 250 years, a few hundred peasant farmers lived off the land in this area.
